“Butterfly of Taiwan”, dark oolong, 50g

This rare oolong grows exclusively in the mountainous regions of Taiwan. Fermentation is stopped at precisely the right moment: the leaf edges turn brown while the heart remains green. The result is a leaf that is fuller and more finely processed than typical oolongs. The infusion shines with a brass-like hue, and when the leaves unfurl, a colorful display of green and brown shades emerges. The flavor offers a subtle black tea character, pleasant sweetness, and a lightly “doughy” note.
