Tencha – Kawane, Shizuoka The Kawane region in Shizuoka, Japan’s most important tea-growing area, is the true home of high-quality Tencha in spring. It is made from Yabukita and Okumidori cultivars. Before harvest, the tea bushes are shaded for three weeks, then the leaves are picked, briefly steamed, sorted, and dried. Unlike Sencha or Gyokuro, Tencha is not rolled, preserving as many beneficial compounds as possible before grinding. In the cup, the result is immediate: wonderfully full-bodied flavor with a slightly herbal note and absolutely no bitterness. The powder is vibrant green and bright.
